Per accompagnare un’Amatriciana benino, serve un vino dotato di media morbidezza, di un buon tenore alcolico e tannini presenti ma non eccessivi , per accompagnare l’untuosità e la succulenza della ricetta.
Un vino profumato e dotato, soprattutto, di una persistenza che non sfiguri accanto a quella di questo primo piatto e caratterizzato anche da una certa acidità e da sapidità delicata e non eccessiva. Questo per vivacizzare la tendenza dolce di pasta, guanciale e pomodori e per non esagerare la saporosità del pecorino e, ancora, del guanciale: giusto quel tocco di mineralità in più che insaporisce senza salare il piatto.
Il Rosso Piceno Quiete di Bastianelli è il giusto compromesso per assaporare a pieno questo gustoso piatto. Rubino fitto. Incisivo e tipico il bagaglio olfattivo di marasca, more, confettura di bosco e spezie, più austeri i rimandi ad humus, radici, tabacco mentolato e liquirizia. Caldo e lievemente tannico con ottimo finale.
Ricetta
La ricetta originale prevede l’utilizzo di ingredienti ben precisi: guanciale e pecorino di Amatrice.
Tagliate il guanciale a fettine dello stesso spessore e poi riducetele a striscioline della stessa grandezza. Non tagliate il guanciale a cubetti, si rischia di rendere il grasso troppo duro.
Fate fondere un cucchiaio di strutto in una padella, unite il peperoncino e subito dopo le striscioline di guanciale. Abbassate il fuoco e fatele rosolare fino a quando il grasso del guanciale non avrà assunto un bel colore giallo dorato. Fate attenzione a non farlo bruciare, è fondamentale per la riuscita di un buon sugo all’amatriciana.
Unite la polpa di pomodoro e fate cuocere a fuoco lento per circa 10/15 minuti o fino a quando il sugo non avrà raggiunto la giusta densità. A fine cottura, assaggiate e regolate di sale, considerando che il guanciale aggiungerà sapidità.
