MELANZANE ALLA PARMIGIANA

L’abbinamento tra vino e melanzane alla parmigiana ci regala tante diverse possibilità, che comprendono sia il vino rosso che il vino bianco. Classico della stagione estiva e simbolo della tradizione gastronomica italiana, una teglia di melanzane alla parmigiana vuole accanto a sé un vino che ne esalti il gusto caratteristico e si leghi bene con i diversi ingredienti, melanzane, pomodoro e formaggio in primis.
Una pietanza succulenta, ricca e corposa, come la Parmigiana di Melanzane richiede un vino di struttura adeguata, con quella giusta dose tannica in grado di portare il corretto equilibrio nell’assaggio. L’Etna Rosso di Fischetti è un rosso adeguato alla Parmigiana, con il suo gusto fresco e profumi fruttati di lamponi e ciliegie, una struttura media e una morbidezza in grado di equilibrare una buona freschezza.
Altra alternativa valida è il Pecorino di Bastianelli con i suoi profumi di frutti maturi con leggere note vanigliate, dal suo gusto pieno e caldo ben supportato dalla freschezza e con un finale agrumato.
Infine, l’Umbria Rosato di Mevante costituisce un buon compromesso per gustare al meglio questa portata con i suoi profumi freschi di ciliegia un pò acerba, rosa e melograno e dal sapore pulito e rispondente al naso.
Ricetta
Prima di tutto tagliate la mozzarella a fette di 5 mm e asciugatela tamponando fetta per fetta con canovaccio pulito. Se è molto umida strizzatela.
Poi preparate il sugo di pomodoro. Tritate finemente la cipolla con un coltello, fate soffriggere in 1 cucchiaio di olio, infine aggiungete passata, basilico e fate cuocere con coperchio per circa 20 minuti. Poi salate e lasciate da parte.
Nel frattempo, lavate le melanzane, asciugatele e tagliatele con un coltello ad uno spessore sottile circa 4–5 mm.
Friggete le melanzane in abbondate olio, in una padella larga a capiente per velocizzare la cottura. Scolate su carta assorbente da entrambi e lati e asciugate tamponando.
Prima di tutto, aggiungete in una teglia 2 mestoli di salsa di pomodoro. In ordine aggiungente uno strato di melanzane, poste una vicino all’altra senza creare spazi, fette di mozzarella sgocciolate, basilico in foglie, 2 cucchiai di parmigiano.
Poi aggiungete in mestolo di sugo per coprire il primo strato e continuate ad assemblare alternando: melanzane, mozzarella, basilico, parmigiano, salsa di pomodoro. Infine completate con un ultimo strato di melanzane, salsa, una manciata di parmigiano e basilico.
Cuocete le vostre melanzane alla parmigiana in forno ben caldo a 180° nella parte media del forno per circa 35–40 minuti, a metà cottura trasferite sul fondo del forno per 10 minuti. Gli ultimi 10 minuti aprite, aggiungete 2 cucchiai di salsa di pomodoro sulla superficie, ancora una manciata di parmigiano e fate gratinare a 200° con grill.
